I am so excited that thanksgiving and Christmas are around the corner. Although here in Florida fall is mild, I love to start feeling the fresh breeze and I get so excited when the temperatures starts going down a little. I’ve been inspired to prepare some new and delicious recipes and I would like to share them with you on this post.
Traditionally I used to just eat my avocado as a gazpacho salad, a simple slice with my meals or a plain slice inside Puerto Rican or Cuban bread. I wanted to venture out a bit and prepared this delicious avocado pizza.
Avocado Pizza Recipe: (makes 1 individual serving)
1 Millet bread
1 tsp Olive oil
1 clove of Garlic
3 slices of Avocado
Salt to taste
Tomato diced
Cilantro leaves
- Slice millet bread in half and use one of the halves for 1 individual pizza.
- Mash the garlic and mix with the olive oil
- Spread the olive oil/garlic mixture on the bread
- Toast on the toaster oven (I used the George Forman electric grill)
- Mash the avocado and add salt to taste
- Take toast/pizza out of oven and spread the avocado on it
- Place tomatoes and cilantro on the pizza
- Enjoy
This recipe was delicious and easy to make. You can make it as a main meal with a salad, or with kale chips and sweet potato chips like I did. For those hard core pizza lovers that miss the cheese and sauce, you can substitute the olive oil and garlic for the pizza or tomato sauce and add low fat or vegan cheese on top and then place in the oven for the cheese to melt. Don’t forget that the kitchen is like a lab, be creative and give it your own spin.

It was yummy, but what I loved most was creating the beautiful pumpkin bowl to serve it in. This idea I got from instagram @pizzazzerie. Thank you @pizzazzerie for sharing your wonderful idea. I believe my family enjoyed our time together, and the food.
A great gathering must have a fun dessert. These I consider more of a healthy dessert/snack type. My son and I prepared these sweet tasty chocolate dipped strawberries and some air popped popcorn drizzled with melted light cocoa. Oh the sweet pleasures. Some of my favorite!
