WARM KALE, MUSHROOM AND RED PEPPER SALAD

I made today the most delicious warm kale salad inspired by kimberly Snyder . It is simple, but very tasty and healthy. Even though it is a warm type salad it feels very light to the stomach.

Ingredients:

1 cup of Kale
1/3 cup of mushroom
1 small red pepper
1 tsp. olive oil
1 tsp. coconut oil
juice of 1/2 lemon
salt to taste

Directions:

1. Wash and dry the kale and place in a bowl. Add the olive oil, lemon juice and the salt to the kale and let it sit.

2. Cut the mushrooms and pepper

3. In a pan at medium heat place the coconut oil, the diced mushroom and pepper. Saute for a few minutes.

4. Add the kale to the pan and saute for just a few minutes in low heat.

5. Serve and enjoy.

You may want to just heat the mushroom and pepper and add to the room temperature kale just like Kimberly Snyder did or heat the kale like I did. Its pure deliciousness. I enjoyed it with quinoa and some ripe plantains.
